Wahlburgers: Burgers, Opera Quays, Sydney (17 Feb 2022)

The Wahlburger wait has begun 

How many Wahlbergs does it take to make a burger, 3. Actors Mark & Donnie, and Chef Paul expand their burger empire into Sydney this week. Sports bar vibes with most of the menu under $20 and 17 sauces to choose from including a vegemite aioli has the potential to draw in the tourists and office workers with the bonus feature of harbour views. 

I place my takeaway order at the bar as instructed. 'The Our Burger' - Beef patty, lettuce, tomato, onion, pickles. American cheese, Paul’s signature Wahl sauce ($17.50) and French fries ($6). The 26 minute timing hard to stomach but hopefully they'll improve over time. So as far as Sydney burgers go I'd say it hits at a respectable average and that's because Sydney's burger game and competition has improved dramatically over recent years. Melty cheese, tasty Wahl sauce and the nice formed crust on what seems like a medium to well cooked patty works in it's favour. I found the soft bun a touch dry and slightly oversized working against it. I welcomed the contrasting sharpness of the thin sliced raw onion. While the awkwardly named 'The Our Burger' has the usual elements of a normal classic I somehow wished I'd ordered the 'Make it your Aussie burger' for only $1.50 extra which includes beetroot, pineapple and egg. Next time. 

Seasoning on the fries enjoyable and appreciate the skin-on taste but looks short-changed in the under-filled small container for the price and aren’t as hot and crispy as hoped. Service was friendly but seemed stretched in finding their feet in the opening week but I'm sure they'll be smooth sailing in due course. They're open for breakfast from 7 am with some American and Aussie breakfast classics plus a handheld 'Our Breakfast Burger' which sounds good on the menu. I'm also tempted by the BBQ Bacon Burger with beef patty, tasty cheese, bacon, fresh jalapenos, BBQ sauce & avo spread although I'm not quite sure about the avo spread.

Vegan burger game changer

From first impressions it’s looking like one great step forward for vegan burgers in Sydney at the new Mary’s Underground. I was very impressed with Chicken Burger 'Vegan Option' with Fries ($18). After unwrapping, it visually brought back memories of their famous chicken burger. Clever use of the cauliflower that's been spiced up and deep fried for some pleasant crunch factor. Comes in a pillow soft bun that molds easily around the ingredients but manages to hold its structure well. Fantastic melty cheese which I wouldn't be able to pick it being vegan. Apparently sourced from Greece. Sauce is tasty good and there’s lettuce and a slice of tomato hidden inside. A very enjoyable and tasty eat and would happily order again. Fries are crispy and well-salted. A win for the vegans and great work by the guys who are famous for their burgers and fried.

Also tried the Mary's Burger ‘Vegan Option’ with Fries ($18) by luck as it came out accidentally instead of my chicken burger. It’s their own vegan pattie creation instead of resorting to one of the existing processed ones on the market. They achieved a nice grill crust with a rich and meaty texture making it quite filling for a vegan pattie and visually looked like a meat pattie. I liked how it's using real ingredients rather than processed ingredients. Bun was pillow soft bun but struggled a little under the heaviness and sauciness of the contents so best to eat this one in a timely manner. Good melty cheese and tasty special sauce. Fries tried with the bottled chilli sauce on the table which gives a good hit for the tastebuds. I reckon they could even sell these vegan patties retail for cooking at home, that's my hope anyway.

Service is friendly and the outdoor seating is a lovely spot to sit on a nice day. Inside is dark and moody and toilets are located downstairs in the dungeon level. Drinks are available including ‘The Fucktini’ with ‘Ketel One, Kahlua, Coffee & Fuck’. Sounds like a good Friday drink for after work to celebrate TGIF.

Japanese sushi burger

It's my first time here and had my doubts about this burger concept but Chase Kojima seems to have done a great job making it possible. Burger visit inspired by Nick Effendi burger review who highly rated this burger. Gojima cheeseburger - Angus beef, cheese, tomato, pickles, lettuce & special sauce, wrapped in Japanese sushi rice and nori ($12.90) had a nice juicy pattie, melty cheese and tasty sauce. I didn't think it would hold together well but it managed to stay stable throughout the eat. My only reservation is the smell of the nori seaweed when eating a cheeseburger as my brain is thinking I'm about to eat a sushi roll. It's a pretty drippy eat so just watch out. I like how they give you a wet wipe with the meal which certainly does come in handy. Next visit I'll try their other most popular burger of the Salmon Miso Sushi Burger which I'm suspecting the nori smell won't be as strange for me. Friendly service and a nice clean seating area.
