Home Cooking: Marinated Lamb Cutlets with Cauliflower Puree, Green Beans and Oven Roasted Tomato (5 April 2010)

Loving cauliflower puree

How good is cauliflower puree! It's dead easy to make and tastes 300% better than normal steamed cauliflower. Ever since I saw it demonstrated on MasterChef I love making and eating it. All I do is boil up the cauliflower until it's soft then put it in the blender, add some salt, butter and a dash of milk and blend. Goes fantastic with scallops and with my all time favourite cut of meat, lamb cutlets. Lamb cutlets were marinated in my usual lemon juice, garlic, salt, pepper and herbs but ran out of lemon juice so added a dash of Berri Australian Fresh Breakfast Juice to give it some more liquid — thankfully it did the trick. Tomatoes were oven roasted with mixed herbs, salt, pepper, paprika and olive oil.
