Best Choc Cake comes to Oz

“This flourless, layered chocolate meringue and airy chocolate mousse, topped with a thin luscious glaze of ganache creates the perfect combination of desirable textures that melts in your mouth. Yet this decadent choc‐filled cake is quite light, making it the ideal chocolate indulgent treat without the guilt.”

Thanks to NanaYaa Dankwah from Flavours Hospitality Marketing for organising a sample of the Traditional chocolate cake ($49 large size) made with French Valrhona chocolate 53% cocoa. I'm generally more of a dark chocolate fan so I'd be interested to compare the taste to their Bittersweet 70% cocoa version. There's apparently over 30 stores already worldwide including Rio de Janeiro, Madrid, New York and Sao Paulo although I would have thought for Sydney the heart of the CBD would have been a better location than Warringah Mall. Perhaps a very high percentage of chocolate lovers exists in Brookvale compared to the rest of Sydney? It's definitely a cake for chocolate lovers although I'd class it more of a dessert than a cake. I found it quite rich and decadent so was happy enough with a small piece. I reckon the large size could comfortably fulfill about 16 people or more depending on their chocolate tolerance. Being so rich and sweet it would go well with a coffee or even a scoop of plain ice cream on the side. I liked the melt-in-your-mouth texture although my favourite chocolate 'cake' is still the Success Slice from Alexander's Patisserie which I find lighter, less rich and texturally enjoyable.

SNAPSHOT REVIEW:
PROS: Chocolate lovers will definitely enjoy, It's light in texture although quite rich in flavour, Flourless, Seems reasonably priced for the technique and flavour
CONS: It's located all the way over in Brookvale, It can't be good for your figure, Hard to cut nicely once it starts melting a bit, Who the hell is Hana McMahon (quoted on their website from Northern Beaches)
MUST TRY: Checking out the store and trying the Bittersweet
Traditional chocolate cake ($49 large size)

The hold test — can get a bit messy on the fingers

Crumble test — does fall apart quite easily

Be sure to use a sharp knife and will get messy so might need to be cleaned between each cut

Tasting table

Taste test survey — mostly loved and well-liked

Whoa! That looks like an indecent amount of chocolate. You'd only need a little piece to get your chocolate hit for the day.

I know I am stating the obvious but look at the way the chocolate dribbles down the sides of the cake!

Hey Simon! Great Review! This really looks like one of the best chocolate cakes on earth. Although it looks like a giant cookie cake to me. Might try it out.
