Home cooking: Hand cut chips at home using Cold Oil Cooking Method (1 Feb 2022)

Crispy hand cut chips at home

Using the Cold Oil Cooking Method (which we first discovered in 2010), olive oil and Spudlite potatoes these have so far been the most successful crispy hot chips the Mrs has cooked at home. So yummy. It's amazing of the result considering all you have to do is place your homemade hand cut potato chips in cold cooking oil, turn on the heat to high and watch them cook until golden brown. Take them out when they look good and drain on potato towel and season. Not quite sure how it works but it does.

This fish n chip shop is well located for a chip fix. Chips ($8 large) with chicken salt is one of my favourite guilty pleasures after a beach swim. These were pretty good with the right amount of crispy finish to please. Decor of the shop looks quite tired and the service could probably be friendlier and it's cash only. All the usual suspects on the menu and there doesn't seem to be much competition in the area. Across the road is one of my favourite beach pools. Parking in the area is metered except for further up the road.

Hot chips craving sorted

This place used to be Kiwi Style Fish & Chips but has since been sold and now has new owners. The Mascot shop still remains though for Kiwi Style Fish & Chips. The menus, seating and basic decor remain here and thankfully the nicely cooked chips as well. Hot Chips ($4 minimum order) are crispy and a generous portion for the minimal order making it a Simon Favourite. Service was friendly. Kitchen turnaround can be quite slow when busy but their quality product is worth waiting for. Menu is pretty reasonably priced and the shop is located not too far from the beach and park down the road.

Cheap eats on Macquarie St

Such a reasonably priced menu at this basic cafe. Beef burger with chips ($7.90) is cheap for a quick bite to eat. Very soft bun, thin patty and a decent amount of crispy hot chips. I reckon a bit of melted cheese would do wonders for the burger for only $1 extra and a bacon or egg will also only add $1 to pimp it up. Service is responsive and keeps the place fairly clean. Nice outlook towards the Royal Botanic Garden across the road.

Quick and easy fish and chips

Located between QVB and Town Hall Station this takeaway only shop caters well for those in need of a simple grilled fish, chips and salad. I've had it many times. Seems to be one of my comfort foods for lunch. There's no seating so you have to venture upstairs to around Town Hall or my preference has always been to sit on level 2 of the QVB. Grilled fish, chips and Greek salad ($9.50) has a light dressing and decent size fillet of fish. Squeeze of lemon a must. You have to be lucky with the timing of the hot chips. If they've just cooked a batch they'll be hot and crispy as preferred. They've been around for years and tell me they're planning a renovation in the coming months
