Chef Leong: Oven baked tomato stuffed with eggplant (2 September 2009)


Simple & Tasty

After a successful simple dish recipe of Portobello Mushroom with Meatball and Tomato I thought of this variation using eggplant and tomato. I pre stir fried the cubed eggplant with lots of spices and herbs before stuffing into the tomato and also added some shredded cheese for extra taste. I liked the idea of just putting vegetables together which can simply be popped into the oven and baked for a tasty healthy meal.

hi rilsta, i like how it's pretty simple and everything cooks at the same time so less mess and washing up which is always a good thing.
